Power Packed Apple Sauce
Well, a lot has happened lately. I’ve been traveling, making kombucha, building a house, working, and leaving balled up underwear in my pant leg of my SKINNY jeans while I’m in public. I can’t lie about this stuff. It happened. For real. So first on the list, I got to attend the amazing Weston A. Price Foundation again this year. Last year was my first one and I pretty much told them to sign me up for life. It was an amazing time with speakers and friends and food. Okay, so it was really mostly about the food. The conference […]
Coconut Milk Whipped Cream
This is one of the BEST treats out there, especially topped on some fresh strawberries! And since “tis the season” for berries up here in NWA you should make some of this pronto! So the deal with coconut milk is it can totally vary brand to brand. Of course it’s best to buy organic but even that doesn’t always steer you clear of some of the extra additives that might be added. I typically stick only to Natural Value brand because it is just straight full fat coconut milk. Through many experiments of making coconut milk whipped cream with Thai Organic, […]
Peppermint Fudge
I’ve always loved fudge…well, who am I kidding, I’ve always loved a lot of things. But fudge is always considered extra special to me. I literally turned my kitchen in to a treat factory over these past couple of weeks. I had this grand idea to make valentines love boxes – see below It’s been fun and dangerous all at the same time. I’ve been delving into blogs and buying cookbooks that I probably shouldn’t have to get it all together. And thank God I’m starting the 21 day sugar detox on Monday because I’m sure I have eaten […]
Salted Chocolate Almond Candy Bar
Lately my husband, (yes, I’m going to blame him for bringing this to our house and forcing me to eat them) has been buying this salted almond chocolate bars. Have you seen em? I believe they are from the devil. I always tell him, “okay, fine, just give me ONE square.” Has anyone ever just eaten ONE square!?! Probably never. Needless to say the madness had to stop and so I created what I thought would be a better option then the store bought candy bar. It was real tough testing all these to make sure I got it just […]
Paleo Snow Ice Cream
It snowed buckets here over the past couple of days and it is FREEZING! Not just outside but in my house! We’re renting this cute historic home while we build our new house. WELL, we signed up for this when it was all cute and fun and pleasant outside. I fell in love with all the gorgeous windows that I’m now cursing because you can literally feel the wind coming through the windows. I sleep with sweats, a fleece, 2 pairs of socks, […]
Caramel or Almond Butter Candy Cups
Uh wha??? Candy!?! Yep, that’s right. Just in time to make a little treat for your sweetie for valentines day. I was so thrilled how these turned out and how “official candy looking” they look! The best part is that they are pretty easy to make. ****UPDATE**** Oh my o my! Life changing- thats all… These things are amazing with homemade almond butter and you will flip your lid. I kept telling Jude, “just wait babe, when you try these, you’re gonna flip your lid.” And he was all “what lid mom, what are you talking about?” Haha 🙂 So […]
Paleo Chocolate Pudding
Since I’m nursing I’m pretty much ALWAYS hungry. If I’m not eating then I’m thinking about eating…and if I’m not thinking bout eating then I’m thinking about what to make TO eat! Ha! Needless to say I LOVE me some food and I really enjoy creating new healthy food options. It is such a blessing to eat something that totally HIGH fat with zero regret. Why? Because we’re talking about good fat here, quality fat. And it’s so super important especially when you’re nursing a wee one. Food is fun! Just eat the good stuff people!! No trans fat, HFCS, […]
Almond Cinnamon Sweetbread
Almond meal out the wahzoo around here! If you make your own almond milk then you know what I mean. I will try to use it in crackers or cookies…mostly cookies 🙂 But I have decided to try to use it in any recipe calling for almond flour and just do half almond pulp and half almond flour depending on what the recipe calls for. So my first attempt was with a recipe adapted from Elana’s Pantry for a paleo breakfast bread. . It turned out perfect! We ate it all up, and it was delicious! So here is the […]
