Almond Cinnamon Sweetbread

Almond meal out the wahzoo around here! If you make your own almond milk then you know what I mean. I will try to use it in crackers or cookies…mostly cookies 🙂 But I have decided to try to use it in any recipe calling for almond flour and just do half almond pulp and half almond flour depending on what the recipe calls for. So my first attempt was with a recipe adapted from Elana’s Pantry for a paleo breakfast bread. . It turned out perfect! We ate it all up, and it was delicious! So here is the recipe-

Almond Cinnamon Sweetbread

Ingredients

  • 1 C almond pulp (leftover from straining almond milk)
  • 1/2 C almond butter
  • 2 eggs
  • 2 Tbsp honey
  • 1 tsp vanilla
  • 1/4 tsp sea salt
  • 1/4 tsp baking soda
  • 1 tbsp cinnamon
  • 1/2 C raisins (optional)

Directions

  1. Mix together all ingredients in a large bowl and then transfer to a greased 8×8 or slightly larger dish.
  2. Bake at 325 for 15-18 minutes. Yum!

    My raisins all sunk to the bottom. I ran out of honey and did something crazy — subbed maple syrup!!! Turned out all right, but…I think honey woulda probably been a bit better. I have a quick question…is it 1 Tablespoon or 1 teaspoon of cinnamon. I do love cinnamon, so I stuck with 1 Tble. And yes, it’s true, I made 3 of your Desserts in one day! Sweet tooth? yes!
