Pumpkin Butta

Ingredients

  • 1 whole cooked pumpkin
  • 1/2 cup honey
  • 1/2 cup apple juice
  • 2 Tablespoons lemon juice
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Directions

  1. Add all ingredients to the crockpot and set on low overnight. When your house smells like pumpkin pie nation it’s done 🙂
  2. Add the mixture to the vitamix and puree until smooth. I stored mine in the mason jars in the fridge. Side note- I increased the honey a bit in this recipe because mine wasn’t too sweet but that is how I like it especially since it is going on already sweet pancakes. If you like things a little on the sweeter side then I would increase the honey.
