Pumpkin Butta
Ingredients
- 1 whole cooked pumpkin
- 1/2 cup honey
- 1/2 cup apple juice
- 2 Tablespoons lemon juice
- 1 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
Directions
- Add all ingredients to the crockpot and set on low overnight. When your house smells like pumpkin pie nation it’s done 🙂
- Add the mixture to the vitamix and puree until smooth. I stored mine in the mason jars in the fridge. Side note- I increased the honey a bit in this recipe because mine wasn’t too sweet but that is how I like it especially since it is going on already sweet pancakes. If you like things a little on the sweeter side then I would increase the honey.
