Paleo Snow Ice Cream

It snowed buckets here over the past couple of days and it is FREEZING!  Not just outside but in my house!  We’re renting this cute historic home while we build our new house.  WELL, we signed up for this when it was all cute and fun and pleasant outside.  I fell in love with all the gorgeous windows that I’m now cursing because you can literally feel the wind coming through the windows.  I sleep with sweats, a fleece, 2 pairs of socks, a sheet, a blanket and a down comforter and then and only then am I comfortable.

So what a brilliant idea to make ICE CREAM when I’m already freezing but things you’ve gotta do have fun with the kids 🙂  I’m not gonna lie, I ate it and just put another layer on.  Now my fingers are numb typing this.  The things I do for you guys!  Hope you enjoy it and I hope you can eat it in your nice warm house 🙂

Here is my son fetching the snow.  Yes, those are pink boots.  He froze his tail off sledding in baseball cleats so we trekked out to walmart to get the boy some winter boots and the place was cleaned out.  Not a single pair left.  So we found a shoe store that happened to be open and they had 1 pair left that were his size but pink (gasp!).  Hey I said screw it, it’s better to be warm then be fashionable!

Ingredients

  • 4 C fresh snow
  • 1/4 C coconut milk
  • 1 tsp vanilla
  • 1/4 C honey

    Directions

    1. Fetch the snow and place into a medium bowl
    2. Mix coconut milk, vanilla, and honey in a separate bowl.
    3. Pour the coconut milk mixture into the snow and stir with a spatula until combined.
    4. Top with toppings of choice.  We added some enjoy life chocolate chips 🙂

  1. First, I love your son’s lack of shame in wearing pink….he rocks it quite nicely! Second, I’m thankful for another reason to love the snow. Great idea! We always called it “snow cream” growing up and it’s been years since I’ve had it! Just steer clear of the yellow snow right?!
