Almond Flour Pancakes

Topped these with some of the slow cooker apple butter recipe I just posted and yum yum! They were gone in a hurry!

Ingredients

  • 1 C almond meal
  • 2 eggs
  • 1/4 C almond milk or water
  • 2 Tbsp coconut oil (liquified)
  • 1/4 tsp salt
  • 1 Tbsp honey

Directions

  1. Mix all ingredients in a bowl and cook on a cast iron skillet. I normally pre-heat my skillets with a little butter for about 5 minutes on the stove top first and the scoop out the pancake batter. You can also add in some grated apples and cinnamon or mashed bananas to the batter for a little something different. Yummy!The drink pictured below is a banana, orange and almond milk smoothie.
