So I have been meaning to do a video of this for literally 2 weeks but every time I make it I’m still in my pj’s and definitely NOT video worthy to say the least. AND THEN- I finally pull it together-I shower, ingredients ready, camera man on hand, and then it just doesn’t work out (baby mad, I crack the eggs and get shells in the blender, etc etc etc!)…So forget it! LOVE IT! Once again a food processor will make this super easy, if you don’t have one yet, just get it, I promise you will love it. What I love about this recipe is that #1- it is grain free, #2 it’s crunchy-I love crunchy, #3 simple and fast. You can use this on top of any kind of fruit you like. Yes, brussel sprouts. You will love it! Just give it a try. I have made this recipe over and over and everyone who thinks they don’t like brussel sprouts likes this recipe. Day #4 Carrot Cake Balls So I just tried this recipe for the first time today. (I promise I wouldn’t have posted it if it didn’t turn out). And what do ya know…low and behold, it worked! These will definitely be a repeat in our house. Carrot Cake Balls 1/2 C walnuts 1/2 C almonds 4 dates, pitted 1/4 C raisins 1/4 C coconut flakes 1 large carrot, grated 1 1/2 Tbsp coconut oil dash of cinnamon Process nuts until finely chopped. Day #3 CHOCOLATE! Chocolate Treat Balls 1 1/2 C walnuts 3/4 C raisins 1 Tbsp honey 1 1/2 Tbsp cacao powder coconut flakes for rolling (optional) Process walnuts in food processor until finely chopped.
