Broccoli Salad with Raisins 1 large crown of broccoli, cut into bite-sized pieces 1 tsp himalyan sea salt 1 tbsp olive oil 3 carrots, grated 1 red onion, finely diced 1 tomato, chopped 1 apple, cubed 1/4 C raisins 1/4 C sunflower seeds 1 tbsp lemon juice Coat broccoli with salt and olive oil. Add other fruits and veggies to the broccoli. Sprinkle the raisins and sunflower seeds on the salad. Dress with lemon juice and toss thoroughly.

Pesto

Basil is in season now and we have buckets of it! Pesto is an easy way to use lots of basil at a time and you can freeze if for later. It can be used many different ways but my favorite is as a dip with some crackers. Pesto 2 big handfuls of basil 1/3 C olive oil 1/2 tsp sea salt 2 garlic cloves 1 tbsp nutritional yeast 1/2 C walnuts (soaked and dried) Process all ingredients except walnuts in food processor. You might need to stop occasionally to scrape down the sides. Add walnuts and process until creamy.

Peach Ice Cream

I must say first the best part of this video is the little streaker in the background 🙂 I love ice cream, especially in the summer when it is hot outside. This satisfies that craving and it is easy to whip up and healthy to eat. You can use other frozen fruits as well. I think tonight we’ll try it with cantaloupe. Peach Ice Cream 3 peaches chopped a frozen for at least 2 hours 1/2 can coconut milk Blend in high powered blender and enjoy!

Seasonal Fruit Breakfast We eat this breakfast all the time, it just varies a bit depending on what is in season. We just so happen to have some super delicious peaches now and some leftover frozen blueberries from what we picked last month. 1/4 C blueberries 1 peach sprinkle of coconut flakes sprinkle of raw whole oats walnuts (could also use pecans or almonds) 1/2 C almond milk (or coconut milk or water or nothing 🙂 mix in a bowl and eat it up!

Yum Yum Yum! Love this recipe with fresh local peaches, it doesn’t get any better than this! Crust 3 C pecans (soaked and dried)*1/2 C coconut flakes1 tsp alcohol free vanillacouple sprinkles of salt5 dates Syrup 5 dates3 Tbsp coconut oil1/2 tsp vanilla1/2 C water Filling 5-7 peaches depending on size (about 6 Cups) To make the crust process pecans, vanilla and salt until coarsely ground. We have a mother load of green peppers and tomatoes so I thought this recipe was appropriate. It is pretty basic, but it is easy and yummy. Stuffed Green Peppers 4-6 green peppers (depending on size) 1 onion, chopped 1 Tbsp coconut oil 1lb ground beef 1 C quinoa (soaked)* 4-5 tomatoes (depending on size) 2 Tbsp chopped parsley salt & pepper Wash green peppers and remove tops. This is a 3 part recipe and it takes a bit of time with the soaking, so plan ahead and it will be soooo worth it!
