Granola Girl

LOVE IT! Once again a food processor will make this super easy, if you don’t have one yet, just get it, I promise you will love it. What I love about this recipe is that #1- it is grain free, #2 it’s crunchy-I love crunchy, #3 simple and fast. You can use this on top of any kind of fruit you like. We normally use what ever fruit is in season at the time. It works with pretty much anything.

Mandy’s Granola

1/2 C almonds
1/2 C sunflower seeds
1/2 C walnuts
1/2 C raisins (sometimes I’ll sub for dried figs or dates)
1/4 C coconut flakes (optional)
1/4 C goji berries (optional)
1/4 C cacao nibs (optional)
1/4 tsp cinnamon

Place nuts and seeds in food processor and process until coarsely chopped. Add remaining ingredients and process briefly to mix. Makes a bunch for normal people (in our house this is gone in one sitting- have I told you I have hungry boys in my house…) What ever you don’t use you can store in the fridge or freezer. Yummy!

    Didnt have sunflower seeds on hand, so substituted pistachios. It is delicious! I love sugary, colorful breakfast cereal. The more cartoon characters on the box, the better. I felt like I was eating breakfast cereal. Yummy!!
