Blueberry Quinoa Breakfast Bowl
#3 breakfast bowl! Yay! I’m on a roll. Quinoa is AWESOME! It is grain like but it is actually a seed, so it passes for a gluten free diet. It is also very versatile, it can be eaten hot or cold and for breakfast, lunch or dinner. It works best for you to soak it first to make it more digestible. Brazil Nut Ice Cream
What a day to post an ice cream recipe…when it’s snowing outside! Ha! Well, who doesn’t like ice cream all year round even if it is a bit chilly outside. I’ll have to make my next post something warm:-) Brazil Nut Ice Cream 2/3 cup raw, unsalted Brazil nuts (soak a few hrs or overnight) 4-6 dates, pitted (more if you prefer a sweeter ice cream) 1/2 cup water 2 tsp pure vanilla extract 20 medium-sized ice cubes Blend the Brazil nuts, dates, water, and vanilla together until smooth. Add the ice cubes and blend until smooth.
Peach Ice Cream
I must say first the best part of this video is the little streaker in the background 🙂 I love ice cream, especially in the summer when it is hot outside. This satisfies that craving and it is easy to whip up and healthy to eat. You can use other frozen fruits as well. I think tonight we’ll try it with cantaloupe. Peach Ice Cream 3 peaches chopped a frozen for at least 2 hours 1/2 can coconut milk Blend in high powered blender and enjoy!
