What a day to post an ice cream recipe…when it’s snowing outside! Ha! Well, who doesn’t like ice cream all year round even if it is a bit chilly outside. I’ll have to make my next post something warm:-)
Brazil Nut Ice Cream
2/3 cup raw, unsalted Brazil nuts (soak a few hrs or overnight)
4-6 dates, pitted (more if you prefer a sweeter ice cream)
1/2 cup water
2 tsp pure vanilla extract
20 medium-sized ice cubes
Blend the Brazil nuts, dates, water, and vanilla together until smooth. Add the ice cubes and blend until smooth.
