Raw Pecan Pie

I had a request from a sweet friend so this is what I came up with…I am actually not a big pecan pie kinda gal, but I thought it looked pretty tasty 🙂

Cashew Crust

1 C cashews
1 tsp vanilla
sea salt
8 dates, pitted
1 C shredded coconut

Syrup

1 orange
7 dates, pitted
2 tsp cinnamon
1 tsp cardamom
1 tsp nutmeg
1/4 C water, add more if needed

Filling

3 C pecans, soaked and dried*

For the crust, pulse cashews, vanilla and salt in the food processor. Add dates a little bit at a time and process until it makes a “dough.” Empty into a bowl. Use about a tablespoon of coconut to “flour” the bottom of the pie pan. Mix remaining coconut into the cashew dough. Press it into the floured pie pan.

Now to make the syrup, place the peeled orange into the bottom of the vita mix. Add remaining syrup ingredients and blend well. You might need to add more water.

Mix the syrup with the dry pecans and a little orange zest, if desired. Add mixture into pie crust and eat it up! Yum!

*To make the best pecans ever- Soak 4 C for about 8 hours with 2 tsp of sea salt. Then dry in dehydrator or oven on warm until crispy. They are a buttery and so so delicious!
