Roasted Tomato Dressing

I know, I know, I have fallen off the face of the earth for a while, but I never forgot you, and I never stopped thinking of all of you! I would have good intentions of doing a post but then the nausea and energy to put it together would take over and poof, no post…and no post and no posts… Well, the good news is that I’m out of the first trimester and I’m coming back to life so here comes more recipes for you! Please forgive me, I will do better now…at least until a newborn baby comes 🙂

This dressing is one of my favorites in the summer. I could literally just take it in by the spoonful. I will definitely always go back for a second helping of salad with this dressing. You just can’t beat the taste of a fresh tomato and fresh herbs. Yum, Yum! I would love your feedback!

Roasted Tomato Dressing

1 lb fresh tomatoes
1 C extra virgin olive oil
1/4 C balsamic vinegar
1/4 C shallots or green onions, finely chopped
1 tsp raw honey
2 Tbsp fresh basil, finely chopped
1 tsp fresh oregano, or 1/4 tsp dried
1 Tbsp fresh parsley or 1/2 tsp dried

Wash and dry tomatoes. Brush with olive oil and set in a shallow glass pan. Roast at 375 for about 30 minutes or until skin starts to blister. Cool completely. Chop and set aside.
Whisk together remaining ingredients in a bowl and season to taste. Stir in tomatoes. Let dressing sit an hour or so to amalgamate flavors. Store in the refrigerator. Yum!
