5 DAYS OF BALLS! For the next five days I’ll be posting a different ball recipe, some more trail mixy and some more desserty 🙂 Okay so the thought of this theme made me all giggly, but I can only blame that on the old SNL episode with Alec Baldwin aka Pete Schwetty. Okay so back at the task at hand…I decided to do this because many people have been requesting healthy snack recipes. Balls are totally easy to make with a food processor and they generally store really well in the freezer. They are great to keep on hand for a quick snack or a little sweet after dinner. We will start today off with some Key Lime Balls.

Key Lime Balls

1 C cashews
1/2 C raisins
pinch of salt
Juice of 1 lemon
zest of 1 lime
coconut flakes for rolling

Process cashews until ground. Add raisins and process again. Add remaining ingredients and process until it all sticks together. Form balls and roll in coconut. Keep in fridge or freezer. (I prefer to store in freezer)

  1. These are sooooooo good! I mean so good! Im not a fan of super sweet and these are just yummmmy! And easy! A two-fer! Thank you!

    Mmmmmm! The more lime the better! The recipe made about 21 balls. Watch out – they go fast!
