Homemade Sun Dried Tomatoes
We had started stockpiling tomatoes on our counter…between our CSA box, friends and sweet patients who brought us tomatoes we had a TON. So it was time to do make some delicious sun-dried tomatoes! I made these last year and ended up just eating them straight instead of using them in recipes because they were so delicious. Some how I lost my recipe, so my mama inspired what I did to these little guys-thanks mom!
Sun Dried Tomatoes
A bunch of tomatoes, seeds removed as best as possible
Olive oil
Sea Salt
Pepper
oregano
basil
Cut the tomatoes in half and squeeze out the seeds, then slice very thin (It helps if you a have a mandoline). Spread them out on dehydrator* tray and brush with olive oil. Then sprinkle with s&p, oregano and basil. I set the dehydrator to 115 and kept them in overnight. My house smelled like an Italian kitchen when I woke up! Yum!
*My mom doesn’t have a dehydrator so she lined a cookie sheet with parchment paper and baked at 200 for a few hours, flipping tomatoes as needed.
