Arugula/ Spinach Salad + Simple Salad Dressing + “Parmesan”

TWO posts in one day!! That is what happens when you have a snow day. AND I actually got out of my pj’s, so I thought I could catch up on some recipes I’ve been wanting to post for a while. If it stays snowy you might just get 3 recipes tomorrow 🙂

So I don’t know portions very well for this recipe but I’ll do my best.

Salad Dressing:
2 Tbsp coconut aminos or braggs
2 Tbsp vinegar (I used coconut vinegar but sometimes I’ll use apple cider vinegar)
4 Tbsp water
1 C extra virgin olive oil

Put all in a salad dressing bottle and it can be stored at room temp.

Parmesan AKA super sprinkles!

1 C raw cashews
2 garlic cloves
pinch of salt

Place all ingredients in a high powered blender and blend until fine.

Arugula/ Spinach Salad

1 bunch of Arugula
couple handfuls of spinach
1 avocado, sliced
1/4 C “parmesan”
1/4 C pine nuts, or whatever nuts you prefer
salad dressing to taste

Toss it all together and enjoy!
