Mini Chocolate Chip Cookies
I have made these 3 times in the past 3 days, and I have to confess, I’ve only shared a few…um, ya, they are kinda addictive! I used chocolate chips once and cacao chips the other times. I like them both ways. I also think they would be extra delicious crumbled atop of some homemade ice vanilla ice cream…ooohhh, that sounds nice. I’ll try it out for ya 🙂 Mini Chocolate Chip Cookies

Can you believe my pregnant belly didn’t finish off this entire thing before I got a picture!?! Yay! I finally remembered! This can be whipped up in less than 5 minutes and makes a nice afternoon treat 🙂 Chocolate Chip Cookie 1 egg 1/8tsp vanilla liquid stevia 1/4 C honey 1 cup wet almond meal (leftover after making almond milk) 1/4 C gluten free flour 1/4 tsp baking soda 1/4 tsp baking powder 1/4 C chocolate chips or raisins Mix egg, stevia and honey in a bowl. Kale is an amazing superfood. It is LOADED with many nutrients. It can be scary if you have never eaten it before but give it a try with this recipe and I promise you’ll become a fan of the kale club! Kale Chips with Parmesan “parmesan topping” 1/3 C walnuts 1/4 C nutritional yeast 1/2 tsp sea salt Blend in vitamix until it is a powder.
