Chocolate Covered Strawberry Smoothie + Popsicles

Love me some smoothies and popsicles when it’s hot outside. And whew! It’s HOT already! The great thing about these bad boys is that all you need to do is make a little extra smoothie and then pour it into your popsicle mold. I have some similar to these: click here. But these also look pretty fun: Click here. I literally throw everything but the kitchen sink in my smoothies but here is a simple sweet recipe for you 🙂

Chocolate Covered Strawberry Smoothie

Ingredients

  • 1 C organic/local strawberries
  • 1/2 banana
  • 1/2 C coconut milk (can sub almond milk)
  • 1-2 dates, pits removed
  • 1 tbsp cacao powder
  • additional honey if you like sweet
  • 4-5 ice cubes

Directions

  1. Place in the vitamix and viola! I like to add some chia seeds to my smoothie as well. I’ll add about 1 to 2 spoonfuls and then stir.
  2. Let it sit for about 5 minutes so the chia seeds can gel up 🙂 Enjoy!

    Delicious! My 5y.o. kept saying, “Mommy, I can taste chocolate pieces in here!” Ha! We didn’t need any additional honey 😉 My 17-mo old loved it. Next time I’ll probably double the recipe to better satisfy the 3 of us.
