Yummy in my Tummy Granola

Wahoo! I LOVE yogurt but gave it up when I eliminated dairy from my diet. But then I found coconut milk yogurt at ONF, and I fell back in love with eating yogurt for breakfast. The downside is that it is a bit pricey… So for every will there is a way! I came across a delicious yogurt recipe on the spunky coconut blog- I just love her and all her recipes, so I wanted to share the link with you to make your own yogurt…if you choose…otherwise buy it at the store and make your own granola!!

Granola is easy peasy, just some nuts a bit of cinnamon and some dried fruit. I used the combination below this morning, but it varies every time I make it depending on what I have on hand so mix and match!

Gluten Free Granola

Ingredients

  • 1 C almonds
  • 1 C walnuts
  • 1/2 C sunflower seeds
  • 1 tsp cinnamon
  • 1/2 C goji berries
  • 1 C prunes or dried fruit

Directions

  1. Add nuts to a food processor, process until well combined.
  2. Add dried fruit and cinnamon and process again until it becomes clumpy.
  3. Pour in a bowl and enjoy with yogurt or almond milk 🙂

  1. I empty a can(probably BPA laden) of coconut milk into a jar, put in the contents of 1-2 probiotic capsules (I use Biotics Biodolph 7), and let it sit for 24-48 hours then stick it in the fridge. I’ve never tried to sweeten it, but I’m sure it’s tastier! 🙂

  4. Wow…this is one good granola. Thank you for sharing. I made it in my SMALL food processor and it overflowed. Have you tried doing this in the Vita-Mix?

    I never have tried it in the vitamix, I think it would work but I like the food processor so I can make it in bigger batches…it goes fast around here!
