Chia Seed Breakfast Pudding

Who says that breakfast has to always be cereal or eggs?? Breakfast is one of my favorite meals of the day and I always enjoy making breakfast bowls for my family. They are quick and easy to prepare and can be done the night before. You can always mix it up depending on the fruit that is in season.
Chia seeds soaked the night before in the almond milk also make a nice pudding consistency…the longer you soak them the more thick it becomes. There are also many health benefits to incorporating chia seeds into your diet (weight loss, omega 3’s, etc.) So get your cha-cha-chia on!!

Chia Seed Breakfast Pudding

Ingredients

  • 2 Tbsp chia seeds
  • 2 Tbsp coconut flakes
  • 1/2 C almond milk
  • 1 peach, chopped (or fruit of choice)
  • handful of nuts

Ingredients

  • Place chia seed and coconut in bowl. Add almond milk and let sit for 15 minutes (or overnight). Add fruit and nuts and enjoy! Yum!
