Banana Oatmeal Cookies

I had a bunch of bananas so I decided to make these cookies Sunday morning…and then I decided to eat them for breakfast. And hey, when it all good stuff going in, why not eat them for breakfast? 🙂

Banana Oatmeal Cookies

2 C rolled oats
2/3 C almonds
1 tsp baking powder
1/4 tsp sea salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/2 C bananas (about 3 bananas)
1/4 C coconut oil
1 tsp vanilla
1 C raisins

Preheat oven to 350. Lightly oil baking sheet. Grind oats and almonds in the food processor or vitamix. Pour into a large mixing bowl. Stir in baking powder, salt, cinnamon, and nutmeg.
In the food processor add bananas, oil and vanilla and process until smooth and creamy. Add banana mixture and raisins to oat mixture and mix well.
Drop cookie dough by the tablespoon onto baking sheet. Bake for 12-14 minutes. Eat them up! Yum!
