Jude’s Birthday Cake! (Chocolate Beet Cake)


On the hunt for a healthy delicious cake for Jude’s 2nd birthday, I remember coming across something somewhere that was a chocolate beet (yes, I said beet) brownie cake or something that sounded very interesting. Well then I couldn’t find it when I needed it so after a little experimenting with a few recipes, I present to you….drum-roll please….Jude’s chocolate BEET cake…mmm, mmm, good 🙂

And please bear with me, I didn’t do exact measurements, but this should work 🙂

3 C grated beets
1 C sweetener (honey, maple syrup, or agave)
4 eggs
1/2 C coconut oil
2 tsp vanilla
1/2 tsp almond extract
1/2 C cacao powder
1/2 tsp salt

In a small pot heat the beets and sweetener until it comes to a boil. Reduce heat and cover until soft (about 30 min). Transfer beet mixture to a vitamix and blend on high. Add remaining ingredients and blend until smooth. Pour batter into a well greased 9″ pyrex pan. Bake at 350 for about 30 minutes. Yum!

  2. Do more eggs keep flour-less things together better? I made some cupcakes the other day using coconut four and a little almond meal, but only one egg and they were delicious but really crumbly. I’m wondering if more eggs will bind it better…

    I apologize for the delay in this response but yes, more eggs should help. When I make a coconut bread I really like I use 5 eggs!
