Hello, it’s Mandy…I know it’s been a while…I’m working on it! I think of you people everyday and want to post a million recipes BUT the later part of my pregnancy wore me out and now you know whats on the other side of that…a baby! She is precious and wonderful but so time consuming…geez! 🙂 Since daddy and Jude went to the park and little miss decided to snooze (see pic below), I had time to post a recipe-yay!! I feel like when mid afternoon hits I’m always craving something crunchy. I think I look in my pantry every […]

This was one of my favorite dinners I liked to eat growing up. I tweaked the ingredients to make it better for you and it is still one of my favorites AND super delicious.

Slow Cooker Apple Butter

Slow Cooker Apple Butter

So what started out as a great idea for Christmas presents has turned into a labor of love, but after my 4th batch of doubling the recipe I am becoming quite the apple butter makin’ workhorse! I initially peeled the apples using a potato peeler and then chopped them by hand….needless to say it took quite a while and then I was so sad that I only got 3 and 1/2 jars!! AND THEN…my sweet friend loaned my an apple corer/peeler/chopper and my life changed! I ordered a crate of apples from our local apple guy and went to work! […]

I used to make this recipe with Buffalo meat but then we lost our source for buffalo 🙁 I have made it with beef as well but it always seemed a bit more exciting with the buffalo. AND THEN my sweet father in law who always blesses us with delicious wild game and fish brought us some ground elk. I used this for the chili and now I know I’m officially spoiled, it was soooooooo…(breath)…soooooooooo….GOOD! Hope you guys enjoy it as well! Elk Chili 1 tbsp coconut oil 1/2 C chopped onions 3 garlic cloves, minced 1 1/2 C chopped […]

So I have been meaning to do a video of this for literally 2 weeks but every time I make it I’m still in my pj’s and definitely NOT video worthy to say the least. AND THEN- I finally pull it together-I shower, ingredients ready, camera man on hand, and then it just doesn’t work out (baby mad, I crack the eggs and get shells in the blender, etc etc etc!)…So forget it! No video! You don’t really need a video for this anyway. It’s easy breezy. Green Eggs 2 kale leaves or a good handful of spinach 4 eggs […]

LOVE IT! Once again a food processor will make this super easy, if you don’t have one yet, just get it, I promise you will love it. What I love about this recipe is that #1- it is grain free, #2 it’s crunchy-I love crunchy, #3 simple and fast. You can use this on top of any kind of fruit you like. We normally use what ever fruit is in season at the time. It works with pretty much anything. Mandy’s Granola 1/2 C almonds 1/2 C sunflower seeds 1/2 C walnuts 1/2 C raisins (sometimes I’ll sub for dried […]

Basil is in season now and we have buckets of it! Pesto is an easy way to use lots of basil at a time and you can freeze if for later. It can be used many different ways but my favorite is as a dip with some crackers. Pesto 2 big handfuls of basil 1/3 C olive oil 1/2 tsp sea salt 2 garlic cloves 1 tbsp nutritional yeast 1/2 C walnuts (soaked and dried) Process all ingredients except walnuts in food processor. You might need to stop occasionally to scrape down the sides. Add walnuts and process until creamy.

De-li-cious!!! I am a big fan of Denny’s garlic burgers but this made them extra special! Garlic Burgers garlic and beef (haha…it really is that easy!)
